dc.description.abstract This report is based on the determination of moisture content between freshwater Orechromis andersonii and marine Trachurus trachurus species. Knowledge of moisture content in seafood is of great importance to fish industry for economics and quality reasons. An evaporation technique was used in this experiment because it is more/less precise, easy to use and officially accepted for many applications. Data collected were computed to determine the moisture percentage between the two species. In addition a t-test was used to compare the means of the two varieties. Results obtained have indicated that the two species have similar moisture contents en_US
